Heatwave-smashing kohlrabi slaw

A slaw that changed the way I think about slaw last year, recreated this year.

You’ll be needing
2-3 kohlrabi, julienned
An apple if you have one around, also julienned
A handful of minced herbs (I used parsley, but basil is a bit tastier for this)
Rice vinegar (preferably with parsley stems in the bottle!)
A fistful of blueberries
A little salt & pepper 

The first thing to do is start keeping around some herbed vinegar. I just take extra herb stems (parsley is what’s around right now) and put them in a bottle of vinegar, letting it hang out in the fridge indefinitely. 

So, get out that vinegar. Or you can just muddle some herbs in vinegar. That might also do the trick. Get out a tub of Vegenaise (you should have made this purchase by now! but vegan sour cream or even plain yogurt might work) and, in a small bowl, mix about two tablespoons of Vegenaise with about three teaspoons of vinegar. It should be somewhat liquidacious - not too thick - and you want to make sure to get that herby goodness in there.

Mince some parsley and/or basil and add it to the dressing. Basil tastes better, probably, but I had that huge bundle of parsley in my box this week, and, really, it did the trick. Dried stuff really won’t cut it for this.  Set this bowl aside.

Take two or three kohlrabi from your CSA share and julienne ‘em but good. It’s important not to shred them, as that makes the whole thing too wet. You can also add a julienned apple, but where the heck are you going to get an apple in July? (Oh, right, stores.) I didn’t have an apple around last night, and it didn’t hurt the slaw at all.

Anyway, take that dressing and put it on the kohlrabi and stir it up to coat. Then pull an Emeril and throw those blueberries in there like bam. 

Then sit on your porch because it’s about four degrees cooler outside your apartment than it is inside. Probably also drink a beer if you’re so inclined. Actually, now that I think of it, a sweet, cold glass of white wine would probably go great with this stuff.
